Sweet Potato Popsicles

Ingredients

1 medium-large sweet potato 

1 can coconut milk 

2 cups whole milk 

2 teaspoons vanilla extract 

2 tablespoons cane sugar (variable/optional) 

These super easy popsicles are such a treat. We’re trying to beat the heat at the end of summer here in Tennessee, but these would be really great on any day that the sun is shining ‘pon the shoulders of any member of the Sweet Potato Society.

Creamy, refreshing, not too sweet, with a splash a coconut that transports you to a relaxing cabana in the Caribbean. They’re just so easy, so try them ASAP! You’ll need popsicle molds and sticks (I have these ones and they’ve worked well over the years. There are alternatives like using little Dixie cups or something, so feel free to experiment with the popsicle vessel).

This recipe is adapted from several recipes online but mainly this one.

Ready for the freezer!

Step 1

Rinse sweet potato and pat dry. Peel, and dice into small cubes.

Step 2

Place diced sweet potato in a medium sized pot of salted water. Bring to a boil and cook until soft (about 10-15 minutes – test a piece to make sure its very soft).

Drain water and allow sweet potatoes to cool in the strainer. (about 15-20 minutes, not mandatory, but best if they are not hot enough to cook the other ingredients in the blender in the next step.)

Step 3

While sweet potatoes are cooling, get out your blender and add two cups of whole milk (Cruze Farm, of course!), one can of coconut milk (shaken before opened to mix), and two teaspoons of vanilla extract. Add sugar to taste. I used about two tablespoons and they’re pretty perfect in my opinion. You may want them sweeter if you’re sassy like that.

Add cooled sweet potatoes and blend until smooth. It will look like a liquid-y smoothie drink. Taste to see if its sweet enough (omg, so good, right?!).

Step 4

Pour carefully into molds and freeze for several hours. You’ll have to do these in two batches (unless you’re super rich and have MORE THAN ONE popsicle mold). My mixture made 19 popsicles!

*PRO TIP! Instead of inserting the popsicle sticks immediately, it helps to have the popsicles slightly set so that the sticks remain upright. Put molds in freezer for about 30 minutes, then insert sticks and place back in freezer until frozen hard.
