Basic Baked Sweet Potato

Ingredients
1 sweet potato (or more!)

If you’re new to sweet potatoes, this is a great way to start. Maybe you haven’t eaten a straight up just baked sweet potato in a while. They are great.

Instructions

Step 1

Preheat oven to 425° Rinse potato and pat dry. Give it several pokes with a fork. Be careful not to poke yourself!

Step 2

Wrap sweet potato in foil (this is optional but I’ve found that it maintains moisture a little better). You can also place the potato in a foil-lined pan. I like to use a 8-inch round cake pan.

Step 3

Cook until very tender, 45 – 60 minutes. Give it a squeeze and it should be very…squeezable. The time will vary by size and variety of your potato, but allow at least an hour. Patience is a vital virture for enjoying sweet potatoes, generally. The fork test is a good one: If you fork slides into the sweet potato’s thickest part without much resistance, you’re in a good place.

Step 4

Enjoy your delicious and simple food! You’re welcome to top it with butter, coconut oil and or anything you want. I honestly just eat them plain and think they’re great. I pretty much eat the whole shebang if the skin looks good. That’s where that sweet sweet caramelization is at. If you’ve cooked it in aluminum foil, there will be some dripping pooled at the bottom – those are great for drizzling over the potato once you split it open.
